A Culinary Journey
Through Italy
For over 30 years, Chef Ben Hirst has immersed himself in the rich culinary traditions of Italy. His journey began in the north, where he traveled across the regions to discover the country’s finest ingredients and most authentic cooking techniques. With a deep respect for tradition and a flair for contemporary flavours, Ben’s cooking tells the story of Italy, one dish at a time.
Ben’s career has been shaped in the kitchens of some of Europe’s most celebrated chefs. He honed his craft at Michelin-starred institutions like Fergus Henderson's St John (London), Pierre Koffman’s La Tante Claire (London), Michel Rochedy’s Le Chabichou (Courchevel, France), and Gualtiero Marchesi’s L’Albereta (Erbusco). In Rome, he worked alongside Mary Paolillo at the acclaimed Enoteca Ferrara, recognised by Gambero Rosso as Italy’s Best Enoteca.
Ben co-created Necci, a popular bar in Rome’s Pigneto district, and led CucinaMusea, where fine dining met contemporary art.
Ben’s culinary expertise has been recognized in several Italian cookery books, including The Silver Spoon. He has recently written his own book which is available to purchase at Villa Inglese.
